Change material thickness

What's the easiest way to change a material's thickness at the project level?

I thought I could change the value in column B of the SheetStockLibrary tab in Workbook Designer, but it doesn't save when I exit Toolbox. Shouldn't this save?

Do you have to copy the material to the project level in the Project Properties Manager, rename, and re-assign?
