How to Route Products through the shop???

I want to create some sort of unique identifier on the PRODUCT level to ultimately help sort items in reports.  One thought is that I could add a number or letter at the beginning of the product names.  I currently have 6 different routes that a product could take through our shop.   What are some other ways to accomplish this?
