Plot Layers Based on Page Setup

Hello everyone,

Our company is slowly making the switch from using one big franken-file for a job (up to 100 sheets) to doing one .dwg per room. In the spirit of pushing this transition along a little smoother, I am trying to overhaul our templates to be a bit more friendly for this workflow. 

The problem is, we publish our submittals without item numbers or field seams (as these are quite variable over the course of a job's life) and we publish our production drawings with these layers on. Going into each .dwg and adjusting the layers is tedious when you have dozens (or more) rooms. 

What do you all do to mitigate this?

Is there a way I can tie the plot style to the template and just change the page setup before publishing? I'd like a solution that's just a relatively quick step to toggle between, as sometimes we are submitting change orders for approval after we've already began production on a job.
